Ingredients
- ½ lb catfish fillets
- ½ cup cornmeal
- ¼ cup all-purpose flour
- 1 pinch salt and pepper to taste
- 2 cup vegetable oil for frying
- ¼ cup tartar sauce or mayo
- 2 count soft hamburger buns
- 2 leaves lettuce leaves

Pat catfish fillets dry with paper towels and season both sides with salt and pepper.

Combine cornmeal and flour in a shallow dish. Dredge each fillet, coating evenly on both sides.

Heat oil in a heavy skillet over medium-high until it shimmers and a pinch of cornmeal sizzles on contact, ~2 minutes.

Slide catfish into hot oil and fry without moving until edges are golden and crispy, ~3 minutes per side.

Transfer to a paper towel–lined plate to drain.

Spread tartar sauce on the inside of each bun. Layer lettuce, then catfish fillet.

Close the sandwich and serve immediately while catfish is still hot and crispy.
