Ingredients

  • 8 slices bologna slices
  • 4 slices white sandwich bread
  • 2 tablespoons yellow mustard
  • 4 tablespoons dill pickle slices
  • 1 tablespoon vegetable oil

    Place a 10-inch skillet on the stove over medium-high heat and add 1 tablespoon vegetable oil. Wait 90 seconds until the oil shimmers and slides quickly when you tilt the pan.

    Lay all 8 bologna slices flat in the hot oil in a single layer, overlapping slightly if needed. You will hear an immediate sizzle.

    Cook for 2 minutes until the bottom edges turn dark brown and begin to curl upward at the corners, then flip each slice over with tongs.

    Cook the second side for 1 minute until it also turns brown and crispy, then transfer all bologna to a clean plate using tongs.

    Spread 0.5 tablespoon mustard on the top side of each of the 4 bread slices, using the back of a spoon to spread it evenly.

    Divide the fried bologna equally between two sandwiches: place 4 crispy slices in a single stack on top of the mustard on 2 of the bread slices.

    Top each stack of bologna with 2 tablespoons dill pickle slices, distributed across the surface.

    Place the remaining 2 bread slices on top of the pickles, mustard-side down, pressing gently so the sandwiches hold together.

    Cut each sandwich in half diagonally from corner to corner, making two triangles per sandwich, then serve immediately while the bologna is still warm.
