Ingredients
- 1.5 cups orzo pasta
- 1 medium cucumber, diced
- 1.5 cups cherry tomatoes, halved
- ¼ cup red onion, thinly sliced
- ¼ cup olive oil
- 1 whole lemon (zested and juiced)
- 2 cloves garlic, minced
- ½ cup fresh herbs (parsley, dill, or mint, chopped)

Boil salted water in a large pot. Add orzo and cook until al dente, ~9 minutes.
