Ingredients

  • 1.5 cups orzo pasta
  • 1 medium cucumber, diced
  • 1.5 cups cherry tomatoes, halved
  • ¼ cup red onion, thinly sliced
  • ¼ cup olive oil
  • 1 whole lemon (zested and juiced)
  • 2 cloves garlic, minced
  • ½ cup fresh herbs (parsley, dill, or mint, chopped)

Instructions

    Boil salted water in a large pot. Add orzo and cook until al dente, ~9 minutes.

    Drain orzo and spread on a plate to cool slightly, ~5 minutes.

    Whisk olive oil, lemon juice, lemon zest, and garlic in a large bowl. Season with salt and pepper.

    Add warm orzo, cucumber, tomatoes, red onion, and herbs to the dressing.

    Toss until coated. Chill for at least 15 minutes before serving, or up to 4 hours.
