Ingredients

  • 8 oz short pasta (penne or fusilli)
  • 1.5 cups cherry tomatoes, halved
  • ½ cup fresh parsley, chopped
  • ¼ cup fresh basil, torn
  • ⅓ cup red onion, thinly sliced
  • 1 whole lemon (juiced)
  • 3 tbsp olive oil
  • 1 pinch salt and pepper

Instructions

    Boil salted water in a pot. Add pasta and cook until al dente, ~10 minutes.

    Drain pasta and rinse under cold water until cooled. Transfer to a large bowl.

    Whisk lemon juice, olive oil, salt, and pepper in a small bowl until combined.

    Add tomatoes, parsley, basil, and red onion to pasta. Toss gently.
