Ingredients

  • 1 sheet (9 oz) frozen puff pastry sheet
  • 1 cup whole milk
  • 3 count egg yolks
  • ¼ cup sugar
  • 1 tsp vanilla extract
  • 2 cups mixed fresh fruit (berries, sliced peaches, kiwi)

Instructions

  1. 1

Preheat oven to 400°F. Thaw puff pastry on the counter for 5 minutes.

  2. 2

Whisk egg yolks and sugar in a bowl until pale, ~2 minutes.

  3. 3

Place puff pastry on a baking sheet. Prick all over with a fork.

  4. 4

Bake pastry until golden and puffed, 15–18 minutes. Let cool slightly.

  5. 5

Heat milk in a saucepan over medium until steam rises, ~4 minutes.

  6. 6

Slowly pour hot milk into egg mixture while whisking constantly.

  7. 7

Return mixture to saucepan. Stir over medium heat until it coats a spoon, ~3 minutes.

  8. 8

Remove from heat. Stir in vanilla. Cool for 10 minutes, stirring occasionally.

  9. 9

Spread custard evenly over cooled pastry crust.

  10. 10

Arrange fresh fruit over custard in a decorative pattern.

  11. 11

Serve immediately or chill up to 2 hours before serving.
