Scottish Oat Porridge with Berry Compote

Ingredients

  • 1 cup steel-cut oats
  • 2.5 cups water or milk (dairy or plant-based)
  • ¼ tsp salt
  • 1.5 cups fresh or frozen mixed berries
  • 3 tbsp honey or maple syrup
  • ½ tbsp lemon juice

Instructions

    Bring water or milk to a boil in a medium pot over medium-high heat.

    Stir in oats and salt. Reduce heat to medium and simmer, stirring occasionally, until creamy and tender, about 15 minutes.

    While oats cook, add berries, honey, and lemon juice to a small pot over medium heat.

    Simmer, stirring occasionally, until berries soften and release juice, 4-5 minutes. The mixture should look syrupy and glossy.

    Divide porridge between two bowls. Spoon warm berry compote over the top.
