Ingredients
- 1.25 lbs beef sirloin or skirt steak, thinly sliced (1/8 inch)
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 8 count corn or flour tortillas, 6-inch
- ½ count white onion, finely diced
- ¼ cup fresh cilantro, chopped
- 1 count lime, cut into wedges

Pat beef dry with a paper towel. Season generously with salt and pepper.

Warm tortillas in a dry skillet over medium heat, 15 seconds per side.

Heat olive oil in a 12-inch skillet over medium-high until it shimmers.

Add half the beef in a single layer. Do not stir for 90 seconds until deeply browned.

Stir and cook another 60 seconds until no pink remains. Transfer to a plate.

Repeat with remaining beef, cooking 90 seconds without stirring, then 60 seconds with stirring.
