Ingredients

  • 1.25 lbs beef sirloin or skirt steak, thinly sliced (1/8 inch)
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 8 count corn or flour tortillas, 6-inch
  • ½ count white onion, finely diced
  • ¼ cup fresh cilantro, chopped
  • 1 count lime, cut into wedges

Instructions

    Pat beef dry with a paper towel. Season generously with salt and pepper.

    Warm tortillas in a dry skillet over medium heat, 15 seconds per side.

    Heat olive oil in a 12-inch skillet over medium-high until it shimmers.

    Add half the beef in a single layer. Do not stir for 90 seconds until deeply browned.

    Stir and cook another 60 seconds until no pink remains. Transfer to a plate.

    Repeat with remaining beef, cooking 90 seconds without stirring, then 60 seconds with stirring.

    Divide beef among warm tortillas. Top with diced onion and cilantro.

    Serve immediately with lime wedges on the side.
