  • 4 medium russet potatoes
  • 4 cups vegetable oil
  • 1 teaspoon salt
  • 1 medium onion
  • 1 tablespoon butter
  • ½ cup ketchup
  • ½ cup mayonnaise

    Peel the 4 potatoes and cut them into 1/4-inch thick sticks. Place them in a large bowl of cold water and let soak for at least 30 minutes.

    Drain the potatoes and pat them completely dry with a clean kitchen towel. This step is crucial for crispy fries.

    Heat the 4 cups vegetable oil in a large heavy pot over medium-high heat until it reaches 325°F (160°C). If you don't have a thermometer, test with a wooden spoon: bubbles should form around it.

    Carefully add half the potatoes to the hot oil and fry for 5-6 minutes, until they are soft but not browned. Remove with a slotted spoon and drain on paper towels. Repeat with the remaining potatoes.

    Increase the oil temperature to 375°F (190°C). Fry the potatoes again in batches for 2-3 minutes, until golden brown and crispy. Drain on fresh paper towels and sprinkle with the 1 teaspoon salt.

    While the fries cook, slice the 1 onion thinly. Melt the 1 tablespoon butter in a small skillet over medium heat and cook the onion, stirring often, until soft and caramelized, about 10 minutes.
