Ingredients

- 2 large eggs
- 1.25 cups milk
- 2 tbsp butter, melted
- ¼ tsp salt
- 1 tbsp sugar
- ½ tbsp butter for pan

Whisk flour, salt, and sugar together in a large bowl.

Make a well in the center. Crack eggs into the well and whisk until combined.

Gradually add milk while whisking, then stir in melted butter until smooth.

Let batter rest 15 minutes at room temperature.

Heat a 10-inch nonstick skillet over medium-high until a water droplet sizzles instantly.

Lightly butter the skillet. Pour 1/4 cup batter in and immediately tilt the pan in circles to spread thin.

Cook 60–90 seconds until the bottom is pale golden, then flip and cook 30 seconds more.
