Ingredients
- 1 cup all-purpose flour
- 2 large eggs
- 1.25 cups whole milk
- 2 tbsp butter, melted
- ¼ tsp salt
- 1 tbsp sugar
- 1 as needed jam, Nutella, fresh fruit, or ham & cheese for filling

Whisk flour, eggs, milk, melted butter, salt, and sugar in a bowl until smooth.

Let batter rest 10 minutes at room temperature—this relaxes the gluten.

Heat an 8-inch nonstick skillet over medium-high until a drop of water sizzles.

Lightly butter the pan, then pour 1/4 cup batter in the center and immediately tilt and swirl to spread thin.

Cook 60-90 seconds until the bottom edges curl slightly and surface looks set.

Flip and cook the other side 30 seconds until very light golden, then slide onto a plate.

Repeat with remaining batter, stirring it occasionally to keep flour suspended.

Spread jam, Nutella, or cheese on each crêpe, add fresh fruit or ham, then roll or fold.
