Ingredients
- 1 cup all-purpose flour
- 2 large eggs
- 1.25 cups whole milk
- 2 tbsp butter, melted
- 1 tbsp sugar
- ¼ tsp salt
Instructions
- 1
Whisk flour, eggs, milk, melted butter, sugar, and salt in a bowl until smooth and thin, ~1 minute.
- 2
Let batter rest at room temperature for 15 minutes — this allows gluten to relax for tender crêpes.
- 3
Heat an 8-inch nonstick skillet over medium-high until a drop of water sizzles and evaporates instantly.
- 4
Lightly butter the pan. Pour 3 tbsp batter into the center and immediately tilt the pan in circles to spread thin and even.
- 5
Cook 60–90 seconds until the bottom is light golden, then flip and cook the other side for 30 seconds.
- 6
Slide the crêpe onto a plate. Repeat with remaining batter, stacking finished crêpes as you go.
- 7
Fill or top with jam, Nutella, fresh berries, whipped cream, lemon juice, or powdered sugar. Serve warm.
