Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1.25 cups whole milk
  • ¼ cup water
  • 2 tablespoons butter, melted
  • ¼ teaspoon salt
  • 1 tablespoon sugar
  • 1 tablespoon butter for cooking

    Combine flour and salt in a large mixing bowl.

    Make a well in the center and crack eggs into it.

    Pour half the milk into the well and whisk until smooth, gradually incorporating flour from the edges.

    Whisk in remaining milk and water until batter is thin and lump-free. Stir in melted butter and sugar.

    Let batter rest at room temperature for 30 minutes.

    Heat an 8-inch nonstick skillet or crêpe pan over medium-high heat. Lightly butter the surface.

    Pour 3 tablespoons batter into the center and immediately tilt the pan in all directions to spread into a thin, even layer.

    Cook for about 1–2 minutes until the bottom is light golden, then flip and cook the other side for 30 seconds.

    Transfer to a plate and repeat with remaining batter, buttering the pan lightly between crêpes.
