Ingredients

  • 4 slices or 2 rolls sandwich bread or crusty rolls
  • 4 slices ham, sliced
  • 4 slices turkey, sliced
  • 4 slices cheddar or mozzarella cheese, sliced
  • ½ cup beer (lager or pale ale)
  • 2 tablespoons butter

Instructions

    Lay one slice of bread on the cutting board and place two slices of ham on top, covering the bread evenly.

    Layer two slices of turkey on top of the ham in a single even layer.

    Place two slices of cheese on top of the turkey, covering as much surface as possible.

    Place the second bread slice on top and press down gently so the layers compress together slightly.

    Repeat steps 1 through 4 with the remaining ham, turkey, and cheese to make the second sandwich.

    Place a 12-inch skillet over medium heat and add 1 tablespoon of butter, waiting until it melts and foams, about 30 seconds.

    Carefully place one sandwich into the hot skillet and cook until the bottom bread is golden-brown and crispy, about 3 to 4 minutes.

    Flip the sandwich and add the remaining 1 tablespoon of butter to the skillet, allowing it to melt around the sandwich.

    Cook the second side until golden-brown and crispy, the cheese is fully melted (you can see it slightly oozing from the edges), about 3 to 4 minutes.

    Transfer the first sandwich to a plate and repeat steps 6 through 9 with the second sandwich, reheating the pan if needed.

    Pour 0.5 cup of beer into the same skillet (still over medium heat) and use a wooden spoon to scrape up any browned bits stuck to the bottom.

    Simmer the beer for 2 to 3 minutes, stirring occasionally, until it reduces by about half and smells strongly of caramel and beer, about 90 to 180 seconds.

    Pour the sauce into a small bowl or directly over each sandwich.
