Ingredients
- 1 medium, thinly sliced yellow onion
- ½ lb ground beef
- 2 slices Swiss cheese
- 2 slices rye bread
- 2 tbsp butter
- 1 tbsp Dijon mustard
- ¼ tsp each salt and pepper

Heat 1 tbsp butter in a 10-inch skillet over medium. Add sliced onion and a pinch of salt.

Cook onion, stirring occasionally, until deep golden and jammy, about 12–15 minutes. Transfer to a plate.

Form ground beef into two thin patties, each roughly the size of your bread slice. Season generously with salt and pepper.

Return skillet to medium-high. Sear patties 2–3 minutes per side until edges look browned. Top each with a cheese slice.

Spread mustard on both bread slices. Layer cheese-topped patty, caramelized onion, and second bread slice on each.

Wipe skillet clean. Add remaining 1 tbsp butter over medium. Griddle sandwiches 2 minutes per side until golden and crispy.
