Ingredients
- 1 cup basmati rice
- ¾ cup frozen peas
- 1 medium carrot, diced small
- 1 tsp cumin seeds
- 2 whole cardamom pods, crushed
- 1 whole bay leaf
- 2 cups vegetable broth

Rinse basmati rice under cold water until water runs clear, about 1 minute.

Heat oil in a large pot over medium-high. Toast cumin seeds, cardamom, and bay leaf for 30 seconds until fragrant.

Add rinsed rice and stir constantly for 1–2 minutes until grains look slightly translucent at the edges.

Pour in broth and add diced carrot. Stir once, bring to a boil, then reduce heat to low.

Cover and simmer for 12 minutes. Scatter frozen peas over the top, re-cover, and cook 2 minutes more.
