Ingredients

  • 2 medium ripe banana
  • 1.25 cups all-purpose flour
  • ½ cup sugar
  • 1 large egg

Instructions

    Preheat oven to 375°F and line a 6-cup muffin tin with paper liners.

    Mash bananas in a bowl until mostly smooth, then whisk in the egg.

    Add flour and sugar, then stir until just combined — batter should be slightly lumpy.
