Ingredients

  • 1.5 lbs chicken wings (or drumettes)
  • 2 tbsp annatto seeds (or 1 tbsp annatto paste)
  • 1 whole lime (juiced)
  • 4 whole garlic cloves, minced
  • 3 tbsp soy sauce
  • 2 tbsp neutral oil

Instructions

    Heat oil in a small skillet over medium. Toast annatto seeds 2 minutes until fragrant, then mash with a spoon into the hot oil.

    Remove from heat. Stir in minced garlic, lime juice, and soy sauce. Let cool 1 minute, then brush generously over all chicken pieces.

    Pat wings dry and arrange on a sheet pan lined with foil. Season with salt and pepper.

    Broil 6 inches from heat for 8–10 minutes, shaking the pan halfway through, until edges are charred and wings are cooked through.

    Brush wings with any remaining glaze. Serve hot with lime wedges if you have them.
