Ingredients
- 2 pieces pita bread
- 4 cups (chopped) romaine lettuce
- 1 medium (diced) cucumber
- 2 medium (diced) tomatoes
- 1 tbsp sumac
- 3 tbsp pomegranate molasses or red wine vinegar
- ¾ cup (store-bought or homemade) baba ganoush
- ½ cup (thinly sliced) radishes or red onion

Brush pita bread lightly with olive oil. Cut into bite-sized triangles and spread on a sheet pan.

Toast pita chips in a 400°F oven for 6–8 minutes until golden and crispy.

While chips toast, toss romaine, cucumber, tomatoes, and radishes in a large bowl.

Remove chips from oven and toss with sumac while still warm.

Drizzle salad with pomegranate molasses and a pinch of salt and pepper. Toss gently.
