Ingredients

  • 2 pieces pita bread
  • 4 cups (chopped) romaine lettuce
  • 1 medium (diced) cucumber
  • 2 medium (diced) tomatoes
  • 1 tbsp sumac
  • 3 tbsp pomegranate molasses or red wine vinegar
  • ¾ cup (store-bought or homemade) baba ganoush
  • ½ cup (thinly sliced) radishes or red onion

Instructions

    Brush pita bread lightly with olive oil. Cut into bite-sized triangles and spread on a sheet pan.

    Toast pita chips in a 400°F oven for 6–8 minutes until golden and crispy.

    While chips toast, toss romaine, cucumber, tomatoes, and radishes in a large bowl.

    Remove chips from oven and toss with sumac while still warm.

  5. 5

    Drizzle salad with pomegranate molasses and a pinch of salt and pepper. Toss gently.

    Top salad with crispy sumac pita chips. Serve baba ganoush on the side for scooping and dunking.
