Ingredients

  • 1 lb chicken breast
  • 2 medium bell pepper
  • 1.5 cups cooked rice
  • 2 tbsp fajita seasoning

Instructions

    Heat oil in a large skillet over medium-high until it shimmers, about 90 seconds.

    Slice chicken into thin strips, toss with fajita seasoning, then sear 6-8 minutes until cooked through and edges look golden.

    Push chicken to the side, add sliced peppers, and cook 4 minutes until they soften and char slightly at the edges.

    Warm rice if needed, then divide between bowls and top with the chicken-pepper mix.
