Ingredients

  • 4 slices crispbread crackers or thick toast slices
  • 1 whole avocado, ripe
  • ¼ cup hummus
  • 1 whole tomato, ripe
  • 2 whole eggs
  • 1 tbsp everything bagel seasoning

Instructions

    Toast crispbread or bread slices in a skillet over medium heat until golden and crispy, 2-3 minutes per side.

    Slice avocado in half lengthwise, remove the pit, and scoop into a bowl. Mash lightly with a fork until chunky.

    Slice tomato into thin rounds. Spread 1 tbsp hummus on each toast slice, then top with mashed avocado.

    Add a little butter to the skillet over medium-high heat. Crack both eggs into the pan and fry until whites set but yolks jiggle, 3-4 minutes.
