Ingredients

  • 1.5 cups canned fava beans, drained and rinsed
  • 2 cloves garlic cloves, minced
  • 3 tbsp olive oil
  • ½ whole lemon (juiced)
  • 2 whole pita bread
  • 1 cup tomato and red onion, chopped

Instructions

    Combine fava beans, garlic, 2 tbsp olive oil, and lemon juice in a bowl.

    Mash with the back of a spoon until creamy but still chunky, ~90 seconds.

    Taste and season with salt and pepper. Drizzle with remaining 1 tbsp olive oil.

    Warm pita in a skillet over medium for 30 seconds per side until soft.

    Split each pita and divide the warm ful inside.

    Top each sandwich with chopped tomato and onion. Serve immediately.
