Ingredients

  • 2 wraps large flour tortillas or wraps
  • ½ cup hummus
  • 1 medium zucchini, sliced lengthwise into planks
  • 1 large bell pepper (any color), cut into strips
  • ½ medium red onion, sliced into rings
  • 2 tbsp olive oil
  • 1 pinch salt and pepper to taste

Instructions

    Heat a skillet or grill pan over medium-high heat for 2 minutes until very hot.

    Toss zucchini, bell pepper, and onion with olive oil, salt, and pepper in a bowl.

    Add veggies to the hot pan in a single layer. Don't stir; let them char 3–4 minutes.

    Flip veggies and cook another 2–3 minutes until tender and lightly blackened.

    Warm tortillas in the pan for 20 seconds per side until pliable.
