Ingredients
- 1.5 lb chicken thighs
- 2 medium potatoes
- 1 medium onion
- 2 tbsp gochujang
- 2 tbsp soy sauce
- 2 stalks green onions

Cut the 1.5 lb chicken thighs into bite-size pieces. Peel and chop the 2 potatoes into 1-inch chunks, and slice the 1 onion into wedges.

In a large pot, combine the chicken, potatoes, onion, 2 tbsp gochujang, 2 tbsp soy sauce, and 1 cup water. Stir to coat everything.

Bring to a boil over high heat, then reduce to medium-low. Cover and simmer until chicken is cooked through and potatoes are tender, about 15-20 minutes.

Uncover and simmer for 3-5 minutes more, stirring occasionally, until the sauce thickens slightly and coats the chicken and potatoes.

Slice the 2 green onions and sprinkle over the stew. Serve hot with rice, and top with sesame seeds if you have them.
