Ingredients
- 1.5 lb lamb stew meat
- 1 medium red bell pepper
- 1 medium yellow bell pepper
- 1 medium onion
- 2 medium tomato
- 2 tbsp berbere spice
- 2 tbsp olive oil
- 1 tsp salt

Heat 2 tbsp olive oil in a large pot over medium-high. Add 1.5 lb lamb stew meat and cook until browned on all sides, about 8 minutes. Remove lamb and set aside.

Reduce heat to medium. Add 1 sliced onion and cook until soft and golden, about 5 minutes.

Stir in 2 tbsp berbere spice and cook until fragrant, about 1 minute.

Add 2 chopped tomatoes and 1 sliced red bell pepper and 1 sliced yellow bell pepper. Cook until vegetables begin to soften, about 5 minutes.

Return lamb to the pot. Add 1 cup water and 1 tsp salt. Bring to a simmer.

Cover and simmer over low heat until lamb is tender, about 1 hour. Check occasionally, adding water if needed.
