Ingredients

  • ½ head green cabbage, thinly sliced
  • 2 cups bean sprouts or sunflower sprouts
  • ½ cup crispy fried shallots
  • 3 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 1 tbsp fresh ginger, minced
  • 3 tbsp sesame seeds (white, black, or mixed)

Instructions

  1. 1

Slice cabbage as thin as you can — use a mandoline if you have one. Toss into a large bowl.

  2. 2

Add sprouts to the bowl. In a small dish, whisk sesame oil, rice vinegar, and minced ginger until combined.

  3. 3

Pour dressing over the slaw and toss hard for 30 seconds — you want the cabbage to soften just slightly.

  4. 4

Divide slaw between bowls or plates. Top with crispy shallots and sesame seeds. Serve immediately.
