Ingredients

  • ½ head napa cabbage
  • 2 medium carrots
  • 3 whole scallions
  • 3 tbsp sesame oil
  • 2 tbsp soy sauce
  • 1.5 tbsp rice vinegar
  • 1 tbsp fresh ginger, minced
  • 2 tbsp sesame seeds (white or black)

Instructions

    Slice the cabbage crosswise into thin ribbons; cut the carrots into thin matchsticks.

    Slice the scallions on a sharp bias, keeping whites and greens separate.

    In a large bowl, whisk together sesame oil, soy sauce, rice vinegar, and minced ginger.

    Add the cabbage, carrots, and scallion whites to the dressing; toss until coated.
