Ingredients

  • 2 whole sweet potato, medium
  • 4 cups napa cabbage, finely sliced
  • 1 whole carrot, grated or julienned
  • 3 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 1 tbsp fresh ginger, minced
  • ¼ cup combined sesame seeds (white or black) + green onion (sliced)

Instructions

    Slice the sweet potatoes into thin ribbons using a vegetable peeler or mandoline. Place in a large bowl.

    Add the sliced cabbage and grated carrot to the bowl with sweet potato.

    Whisk together sesame oil, rice vinegar, minced ginger, salt, and pepper in a small bowl until smooth.
