Ingredients

  • 3 whole potatoes, medium
  • ¾ cup plain yogurt
  • 3 tbsp cornstarch
  • 1 tsp garam masala
  • ¼ cup fresh cilantro, chopped
  • ½ tsp chaat masala or cumin

Instructions

    Boil potatoes in salted water until a knife pierces easily, about 12 minutes.

    Drain and cool slightly, then peel. Mash with 0.25 cup yogurt, cornstarch, garam masala, cilantro, salt, and pepper until just combined.

    Shape mixture into 4 thick patties (about 2 inches wide). Heat 2 tbsp oil in a skillet over medium-high until shimmering.

    Sear patties 3 minutes per side until golden brown and crispy edges form. Work in batches if needed.

    Mix remaining 0.5 cup yogurt with chaat masala and a pinch of salt. Top warm patties with yogurt sauce.
