Ingredients

  • ¾ lb medium potatoes
  • ½ cup frozen peas
  • ¼ cup all-purpose flour
  • ½ cup tamarind chutney
  • ½ cup plain yogurt
  • ¼ cup fresh cilantro, chopped
  • 3 tbsp vegetable oil for frying

Instructions

    Boil potatoes in salted water until fork-tender, about 12 minutes.

    Drain potatoes, let cool 2 minutes, then peel and mash until mostly smooth.

    Stir peas, flour, and 0.5 tsp salt into mashed potatoes until combined.

    Form mixture into 4 round patties about 2.5 inches wide and 0.75 inch thick.

    Heat oil in a 10-inch skillet over medium-high until it shimmers, ~90 seconds.

    Pan-fry patties 3 minutes per side without moving until golden brown and crispy.

    Slide patties onto serving plates. Drizzle each with 2 tbsp tamarind chutney.

    Top each with 2 tbsp yogurt and a pinch of cilantro. Serve immediately.
