Ingredients

  • 24 sheets wonton wrappers
  • 3 cups neutral oil for deep frying
  • ½ cup sweet chili sauce
  • 3 tbsp soy sauce
  • 1 tbsp fresh ginger, minced
  • ½ cup mayonnaise
  • 2 tbsp sriracha

Instructions

    Line a plate with paper towels. Cut each wonton wrapper diagonally to make 2 triangles.

    Stir soy sauce with minced ginger in a small bowl. Set aside.

    Whisk mayonnaise with sriracha until smooth and combined. Set aside.

    Heat oil in a heavy pot to 350°F. Test with a single wrapper — it should sizzle immediately and float.

    Fry wonton triangles in batches (don't crowd), 45–60 seconds per side until golden and bubbly.

    Transfer fried wontons to the paper-towel-lined plate. Sprinkle lightly with salt.

    Arrange wontons on a platter. Set dips in small bowls: chili sauce, soy-ginger, and sriracha-mayo.
