Ingredients

  • 1 can (5 oz), drained canned tuna in oil
  • ½ medium red bell pepper, diced
  • ¼ medium yellow onion, diced
  • 3 tbsp pitted green olives, chopped
  • 2 whole roasted red piquillo peppers, chopped
  • 8 wrappers empanada wrappers
  • 2 tbsp neutral cooking oil

Instructions

    Mix tuna, diced pepper, onion, olives, and piquillo peppers in a bowl.

    Place 2 tbsp filling in the center of each empanada wrapper, fold in half, and press edges to seal.
