Ingredients

  • 250 g topfen or quark (or ricotta if unavailable)
  • ¾ cup all-purpose flour
  • 1 whole egg
  • 3 tbsp butter
  • 1 whole lemon (zested + juiced)
  • 1 tbsp granulated sugar

Instructions

    Combine topfen, egg, lemon zest, sugar, and a pinch of salt in a bowl until smooth.

    Fold in flour until a soft dough forms; divide into 4 balls.

    Melt butter in a large skillet over medium heat until it froths and smells nutty, ~2 minutes.

    Gently place dumplings in the pan and cook until golden-brown on all sides, turning occasionally, ~8 minutes.
