Ingredients

  • 4 tortillas corn tortillas (6-inch or smaller)
  • ½ cup vegetable oil
  • 1 can (15 oz) refried beans
  • 1 cup Oaxaca or mozzarella cheese, shredded
  • 1 whole avocado
  • 4 whole radishes, thinly sliced
  • 1 cup cabbage, thinly shredded
  • ½ cup salsa roja or pico de gallo
  • 1 whole lime

Instructions

    Slice avocado in half lengthwise. Remove pit, scoop into a small bowl.

    Mash avocado with a fork. Squeeze 1/4 lime over top. Season with salt.

    Heat oil in a 12-inch skillet over medium-high until it shimmers, ~2 minutes.

    Fry one tortilla 30 seconds per side until it is golden and crispy. Transfer to paper towels.

    Repeat with remaining tortillas, working quickly. You'll hear steady sizzle.

    Warm refried beans in a small saucepan over medium for 2 minutes, stirring occasionally.

    Spread 1/4 cup beans on each warm tortilla. Sprinkle 1/4 cup cheese on top of each.

    Top each with avocado mash, sliced radishes, shredded cabbage, and a spoonful of salsa.
