Ingredients
- 4 pieces corn tortillas (6-inch)
- ¾ cup refried beans
- ½ cup queso fresco or feta, crumbled
- ½ cup olive oil
- 1 medium tomato, diced
- ¼ medium red onion, thinly sliced
- ¼ cup fresh cilantro, chopped
- 1 whole lime
- 1 to taste salt and black pepper

Dice the tomato into 0.5-inch pieces. Slice the red onion into thin half-moons.

Chop the cilantro. Cut the lime into 2 wedges. Warm the refried beans in a small saucepan over low heat.

Heat olive oil in a large skillet over medium-high until it shimmers, ~2 minutes.

Carefully slide one tortilla into the hot oil. Fry 60-90 seconds per side until golden and crispy, edges curl slightly.

Remove with a slotted spatula to a paper towel. Repeat with remaining 3 tortillas, frying one at a time.

Spread 3 tablespoons warm refried beans on each crispy tortilla.

Top each with 2 tablespoons queso fresco, then diced tomato, red onion, and cilantro.
