Ingredients
- 2 count large flour tortillas (10-inch)
- 1 can (15 oz) black beans, canned
- 1.5 cups Oaxaca or mozzarella cheese, shredded
- ½ count white onion, thinly sliced
- 1 count fresh lime (juiced)
- ¼ cup fresh cilantro, chopped
- 4 tablespoons vegetable oil for frying

Drain and rinse black beans. Mash half of them with a fork until roughly smooth; leave half whole for texture.

Toss onion slices with lime juice and a pinch of salt. Let sit while you cook.

Heat oil in a large skillet over medium-high until it shimmers, ~2 minutes.

Fry one tortilla until edges curl and light gold, ~2 minutes per side. Transfer to a plate.

Repeat with second tortilla. Keep skillet and oil on the stove.

Warm mashed and whole beans in a small pot over medium for 2 minutes, stirring occasionally.

Place one crispy tortilla on a flat plate. Spread half the warm beans over it.

Scatter 0.75 cup cheese over beans. Return to skillet over medium-low for 90 seconds until cheese melts.

Transfer to plate. Top with pickled onion and cilantro. Repeat with second tlayuda.
