Ingredients

  • 1 lb squid, cleaned and cut into rings
  • ¾ cup all-purpose flour
  • 2 cup neutral oil for frying
  • ¼ cup sweet chili sauce
  • ¼ cup soy sauce
  • 1 whole lime

Instructions

    Pat squid dry with paper towels. Season generously with salt and pepper.

    Heat oil in a heavy skillet over medium-high until it reaches 350°F, about 3-4 minutes.

    Toss squid in flour until evenly coated, shaking off excess.

    Fry squid in batches for 90 seconds per batch until golden and crispy—don't crowd the pan.

    Transfer to paper towels. Pour sweet chili and soy sauce into separate small bowls.
