Ingredients

  • ¾ lb baby squid (cleaned, bodies & tentacles)
  • ½ cup all-purpose flour
  • 2 cup neutral cooking oil (for frying)
  • ½ cup mayonnaise
  • 2 whole garlic clove (minced)
  • 1 whole lime (cut into wedges)

Instructions

    Pat squid dry with paper towels. Season flour with 1 tsp salt and 1/2 tsp pepper in a shallow bowl.

    Heat oil in a heavy-bottomed pot or skillet to 350°F (test with a wooden spoon—steady sizzle without smoking).

    Coat squid in flour, shaking off excess. Working in batches, fry 1.5 to 2 minutes until golden and tentacles curl.

    Transfer squid to a paper towel. Season immediately with a pinch of sea salt.
