Ingredients

  • 1 lb squid (tubes and tentacles), cleaned
  • ¾ cup all-purpose flour
  • 3 cups neutral cooking oil (for frying)
  • 2 whole limes
  • ½ cup mayonnaise
  • 2 whole garlic cloves, minced

    Slice squid tubes into 1/4-inch rings; pat dry with paper towels.

    Heat oil in a heavy skillet or pot to 350°F (use a thermometer). Season flour with salt and pepper in a shallow bowl.
