Ingredients

  • 7 oz soba noodles
  • 10 oz shrimp, peeled and patted dry
  • 2 cups dashi broth (or instant dashi + water)
  • 3 tbsp soy sauce
  • 2 tbsp mirin
  • ½ cup all-purpose flour
  • 2 tbsp scallions and nori (seaweed), sliced or shredded

Instructions

    Bring dashi broth to a simmer in a large pot. Whisk in soy sauce and mirin. Keep hot over low heat.

    Boil soba noodles in salted water until al dente, about 4 minutes. Drain and set aside.

    Toss shrimp with flour and a pinch of salt. Heat neutral oil in a skillet over medium-high until it shimmers.

    Pan-fry shrimp in batches until golden and crispy, about 2 minutes per side. Transfer to a plate.

    Divide cooked soba between two bowls. Pour hot broth over the noodles, dividing evenly.
