Ingredients
- ¾ cup all-purpose flour
- ¾ cup coconut milk
- ½ tsp turmeric
- ½ lb shrimp, peeled and halved lengthwise
- ¼ lb squid, cleaned and sliced into rings
- ½ cup fresh herbs (cilantro, mint, or Thai basil), chopped
- 3 tbsp fish sauce

Whisk flour, coconut milk, turmeric, 0.5 tsp salt, and 0.5 cup water until smooth batter forms.

Heat 2 tbsp oil in a 12-inch nonstick skillet over medium-high until it shimmers, ~90 seconds.

Pour 0.5 cup batter into the skillet, tilting to spread thin. Let it set 1 minute until edges start to crisp.

Scatter half the shrimp and squid across the crepe, then half the herbs. Drizzle 0.5 tbsp fish sauce over.
