Ingredients

  • 12 count large shrimp, peeled and deveined
  • 6 sheets phyllo dough sheets
  • 2 cloves garlic, minced
  • 2 cups neutral oil for frying
  • ½ cup sweet chili sauce
  • ¼ cup fresh cilantro (optional garnish)
  • 1 count lime wedges

Instructions

    Pat shrimp dry. Toss with minced garlic, salt, and pepper until coated.

    Lay one phyllo sheet on a cutting board. Cut into 4 equal squares. Wrap one shrimp in each square, tucking edges underneath to seal. Repeat with remaining phyllo and shrimp.

    Heat oil in a heavy skillet to 350°F, or until a phyllo scrap sizzles immediately when dropped in, ~3 minutes.

    Fry wrapped shrimp in batches, 90 seconds per side, until phyllo is golden and crispy. Do not crowd the pan.

    Drain on paper towels. Serve hot with sweet chili sauce on the side, cilantro, and lime wedges.
