Ingredients

  • ¾ cup all-purpose flour
  • 1 cup water
  • ½ lb shrimp, peeled and deveined
  • ½ tsp turmeric powder
  • 8 leaves butter lettuce or iceberg lettuce leaves
  • ¼ cup fresh cilantro and mint, chopped

Instructions

    Mix flour, water, salt, and turmeric in a bowl until smooth with no lumps.

    Heat 2 tbsp oil in a 10-inch nonstick skillet over medium-high heat until shimmering.

    Pour 1/4 cup batter in, tilt skillet to spread thin, scatter shrimp on top, cook until edges curl and surface looks lacy, about 2 minutes.

    Flip carefully and cook the other side until golden and crispy, about 90 seconds.

    Slide onto a plate and repeat with remaining batter and shrimp to make 2–3 more crepes.

    Serve crepes with lettuce leaves and fresh herbs on the side for wrapping.
