Ingredients

  • ½ lb shrimp, peeled and deveined
  • ¾ cup all-purpose flour
  • ¾ cup coconut milk
  • 1 medium green mango, shredded
  • 1 tbsp fish sauce
  • 2 stalks scallion, sliced thin

Instructions

    Whisk flour, coconut milk, 1 tsp salt, and fish sauce until smooth batter forms, no lumps.

    Heat 2 tbsp oil in a 10-inch nonstick skillet over medium-high until it shimmers, about 90 seconds.

    Pour half the batter in, swirl to spread thin, scatter half the shrimp on top. Cook undisturbed 2 minutes.

    Flip when edges crisp and pull from the pan—golden brown spots should cover the surface. Cook 90 seconds more.

    Slide onto a plate. Repeat with remaining batter and shrimp using another tablespoon of oil.
