Ingredients

  • 8 count large shrimp, peeled and deveined
  • 2 crepes crepe batter (or ready-made crepes)
  • 2 tbsp fish sauce
  • 1 tbsp lime juice
  • 1 cup fresh herbs and lettuce mix (cilantro, mint, lettuce)
  • 1 tbsp chili paste (sriracha or sambal)
  • 2 tbsp neutral cooking oil

Instructions

    Mix fish sauce and lime juice in a small bowl for nuoc cham sauce.

    Heat 1 tbsp oil in a 10-inch nonstick skillet over medium-high heat until shimmering.

    Add shrimp and cook without moving for 90 seconds until edges curl, then flip and cook 60 seconds more.

    Slide shrimp onto a plate. Add remaining oil to skillet, then lay one crepe flat and warm 30 seconds per side until pliable.

    Fill crepe with herbs, lettuce, and cooked shrimp; fold or roll loosely. Repeat with second crepe.

    Serve with nuoc cham and chili paste on the side for dipping.
