Ingredients

  • 1 lb brussels sprouts, halved
  • 1 lb sweet potatoes, cut into 1-inch cubes
  • 2 whole apples, cored and cut into wedges
  • 1 cup red grapes
  • 3 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

    Heat oven to 425°F.

    Toss brussels sprouts, sweet potatoes, apples, and grapes with olive oil, salt, and pepper on a large sheet pan.

    Spread in a single layer, cut side down for brussels sprouts and sweet potatoes.

    Roast for 20 minutes, stirring halfway, until edges are dark brown and vegetables are tender.
