Ingredients
- 1 sheet, thawed frozen puff pastry sheets
- 2 stalks scallions, chopped
- 1 tbsp sesame seeds (white or black)
- ¼ cup fried shallots or crispy onions
- 2 large eggs
- 1 tbsp soy sauce
- 2 pieces store-bought youtiao (fried dough stick), halved lengthwise

Unfold puff pastry on a cutting board and brush lightly with water. Sprinkle scallions, sesame seeds, and half the fried shallots across the surface.

Roll pastry tightly into a log, then curl it into a spiral. Flatten gently with your palm until about 1/2-inch thick.

Heat 2 tbsp oil in a 12-inch skillet over medium-high until shimmering. Slide the spiral into the pan and sear 3–4 minutes per side until golden brown and crispy.

Push pastry to the side of the skillet. Crack eggs into the empty space and cook until whites set but yolks still jiggle, about 2 minutes.

Lay halved youtiao pieces on top of the pastry. Drizzle soy sauce over everything and scatter remaining fried shallots.

Serve hot straight from the skillet. Tear pieces and dip in extra soy sauce if desired.
