Ingredients

  • 1 whole (8–10 inch) baguette
  • 2 large eggs
  • 3 tbsp mayonnaise
  • ½ tbsp soy sauce
  • ½ cup pickled vegetables (carrots, daikon, cucumber)
  • ¼ cup (loosely packed) fresh cilantro and mint leaves
  • 1 whole, sliced jalapeño
  • 2 tbsp neutral cooking oil

Instructions

    Slice the baguette in half lengthwise and pull out some interior crumb to make room for filling.

    Mix mayo and soy sauce together, then spread evenly on both cut sides of the baguette.

    Heat oil in a skillet over medium-high until it shimmers, about 90 seconds.

    Crack eggs into the skillet and fry until whites are set but yolks still jiggle slightly, 3–4 minutes.

    Layer pickled vegetables, fresh herbs, and jalapeño on the bottom half of the baguette.
