    Drizzle batter in thin, lacy threads across the hot oil using a fork or oil drizzler—aim for a 3-4 inch nest shape.

    Fry for 30-40 seconds until pale golden and crispy, flip gently, fry another 20 seconds until both sides shatter.

    Lift onto paper towels and immediately wrap around a cone-shaped tool (empty paper cone, clean foil cone, or even a wooden spoon handle) while still warm.
