Ingredients
- 8 sheets rice paper wrappers
- 1 head butter lettuce or romaine leaves
- 1 medium cucumber
- 1 cup, loosely packed fresh herbs (mint, basil, cilantro)
- ¼ cup natural peanut butter
- 2 tbsp rice vinegar

Slice cucumber lengthwise into 1/4-inch-thick batons. Tear lettuce into bite-size pieces. Tear herbs roughly.

Whisk peanut butter with rice vinegar and 3 tbsp warm water until smooth and pourable. Add a pinch of salt.

Dip one rice paper into room-temperature water for 5 seconds until pliable. Lay flat on a cutting board.

Layer lettuce, cucumber batons, and herbs in a tight row near the bottom. Fold the sides in, then roll tightly.
