Ingredients

  • 3 whole potatoes, medium
  • ½ cup paneer, crumbled
  • ¼ cup all-purpose flour
  • 1 whole green chili, minced
  • ¾ cup plain yogurt
  • ⅓ cup tamarind chutney
  • ¼ cup fresh cilantro, chopped
  • 3 tbsp neutral cooking oil

Instructions

  1. 1

Boil potatoes in salted water until fork-tender, about 12 minutes. Drain, cool slightly, then peel and mash.

  2. 2

Mix mashed potatoes with crumbled paneer, flour, minced green chili, and a pinch of salt until combined.

  3. 3

Divide mixture into 4 equal portions and gently pat into thick patties about 2 inches wide.

  4. 4

Heat oil in a skillet over medium-high until it shimmers. Slide patties in and fry 3–4 minutes per side until edges turn golden brown.

  5. 5

Arrange patties on a plate. Top each with a dollop of yogurt, drizzle of tamarind chutney, and a pinch of cilantro.

  6. 6

Serve immediately while patties are still warm and crispy.
